Whether it's lunch at your desk or a quick bite after a long day, we all find ourselves looking for a speedy "dinner for one" option from time to time. Amy's Kitchen to the rescue — and specifically, this heavenly good prepared frozen dish. It's a winning combination of creamy, mild coconut curry and jasmine rice topped with organic sweet potatoes, red peppers, spinach and tofu. "It was easy to prepare, and it tasted great," says one Best of the Year consumer tester. "I don't even like sweet potato on its own, and I gobbled this up for lunch on a work-from-home day. Then rinsed and recycled the bowl, and got on with my afternoon."
You can thank celebrated California chef Mei Ibach for the carefully perfected recipe. She's a culinary instructor, Malaysian cooking expert, and a chief flavor consultant for Amy's Kitchen, who leans into her South Asian roots to develop and redevelop recipes until she'd happily serve them to her own family. “The flavors are craveable and the ingredients are high quality. One thing to note: it eats light for a full dinner, so I would pair it with a side or add a little extra protein.” And you can thank the company founders for prioritizing organic, whole foods in their ingredient lists. Standout Features: Why It Won
It tastes like it was made fresh, not just “good for frozen.” Our testers called out the distinct vegetables, creamy coconut curry sauce, and ingredients that maintained their flavor and texture after heating.
It works for a lot of different eaters. The dish is packed with almost a full day's servings of vegetables (all organic). Plus, it checks the boxes for vegan/vegetarian/meat-free, gluten-free, and dairy-free.
Lunch or dinner, it's ready in a flash. No shopping, chopping or real cleanup required. And because it lives in the freezer, there’s much less chance of watching those lovely organic vegetables die a slow death in your crisper drawer. Best of the Year arranged for Amy’s Kitchen to ship the frozen curry on dry ice directly to 15 evaluators, with testing conducted during July and August 2026. Each evaluator received one single-serving meal, so the hands-on assessment reflected one preparation and eating occasion. Consumer testers prepared the curry according to package directions and evaluated its taste, texture, overall quality, ease of preparation and likelihood to recommend. They also reported what worked, what they would change and any problems encountered.
Our expert review included two nutrition judges and a chef judge, who assessed the ingredients and nutritional profile, labeling, sensory experience, category performance, value and marketing claims. Given the breadth of Amy’s company-wide sustainability initiatives, two sustainability judges conducted a focused review of the brand’s programs, claims and supporting materials, while two packaging experts separately assessed product’s packaging for innovation, recyclability and more. Best of the Year analysts and editors also prepared the product at home in addition to reviewing the entry and submitted materials.

What Experts and Consumer Testers Said
Our judges and testers kept landing on the same reaction: this tastes really fresh and delicious for something that comes out of the freezer. The curry is aromatic and gently spiced, the heated vegetables keep their flavor and shape instead of turning to mush. One food judge noted that they were "plentiful and did not lose their identity during reheating," while the curry had enough spice to make the dish interesting without overwhelming the other ingredients. “This offers a convenient way to eat healthy, vegan food that tastes great,” says another.
Judges and testers also liked the fact that one meal checks so many boxes: it’s organic, vegan, high in vitamins, gluten-free, and dairy-free. Plus, Amy’s is a Certified B Corporation, which means that, as a company, it meets a standard for social responsibility. One of our packaging judges also praised the recycled paperboard carton and its clear, component-by-component recycling instructions.

One thing to know before you stock the freezer: this is a lighter meal. A nutrition-minded judge felt it could use more protein, and several other testers wanted a little more food to make it a more substantial dinner. So if you have a bigger appetite, we suggest pairing it with a side salad or adding some extra tofu or another protein. You also can't get this one in family size yet, so it's harder to serve a crowd versus some of Amy's other options like the Pad Thai or vegetable lasagna.

The delicious flavor made a big impression. We heard lots of comments like “so tasty,” “crave-worthy,” and “I scraped my plate clean.” Another gave strong praise for the consideration of special diets: "The fact that they go the extra mile to make a delicious product and still watch out for those of us with lactose and gluten issues rates high in my book,” she says.
"The vegetables were plentiful and did not lose their identity during reheating. The curry sauce has enough spice to make the dish interesting without overwhelming the other ingredients. It's nicely balanced." -Best of the Year Judge & Food Category Expert
